How to Scramble Eggs (Video)

Hey guys, how do you like your eggs in the morning? If they’re not fertilized, why not scramble them. Impress your overnight guest with some perfectly scrambled eggs. You can add anything you want to these scrambled eggs but the technique is the universal regardless so it’s important to master it.

  1. Crack eggs into a bowl. Tip: Crack them on them on a flat surface to avoid getting the shells in the bowl.
  2. Whisk the eggs rapidly to incorporate the yolks, whites, and air.
  3. Whisk until pale yellow. Tip: To avoid making an “amuse bouche” of egg due to egg sticking to the pan, use a non-stick pan, please.
  4. Head the pan on medium heat.
  5. When pan is hot, add a small amount of your fat (butter, oil, etc.).
  6. Once the fat is hot/melted, add your eggs. Tip: Some people add milk or water to their eggs at this point. Milk will make the eggs creamier, while water will make them fluffier due to the steam.
  7. Using a heat proof spatula, stir the eggs while cooking to create large curds/lumps (moving the pan simultaneously).
  8. At this point, add seasoning and other ingredients you want to incorporate into the eggs.
  9. When the eggs are almost cooked through but still slightly runny, turn off the heat. They will continue to cook.
  10. After there is no more water in the eggs, slide eggs off of pan onto a plate and serve.
