How to Make an Aperol Spritz

Beat the heat with this refreshing summer cocktail, the Aperol Spritz. Aperol is an Italian apéritif and is known for its bitter orange flavor with hints of rhubarb and herbs. If you’ve ever had Campari, it’s similar in flavor just less bitter and lighter in color. This old school liquor has origins that date back as far as 1919, but lately has been making a comeback at bars here in NYC (and can I get a West Coast inhabitant to confirm LA?). This could be in part due to the fact that Campari, the company that makes the spirit, decided to enter it into the 2010 and 2012 San Francisco World Spirits Competition where it walked away with a gold medal each time — the highest honor you can get.

Regardless of the acclaims, hype, and recent resurgence, when Aperol is mixed with a little prosecco, some club soda and poured over ice you have a wonderful, well-balanced cocktail that’s perfect for the summer.

We’ve been sipping these poolside since May and have yet to be let down. Not only do they look pretty and taste refreshing, but, fun fact, they also do wonders for that lingering hangover. Top it off with an orange twist, orange slice (size is up to you, see: video below) or even an olive to garnish. Serve these all summer long at your fancy BBQ and get your friends fancy lit.

Out of prosecco? Don’t panic. You can always substitute prosecco for your favorite white wine in a pinch. Whatever works. Here’s how to make an them:
