A “Better Burger” Recipe from The Ainsworth

Burgers are a big favorite here in the good ‘ol US of A, but they are often not the most healthy of choices, for your body or for the environment. But if you’re in the market for a healthier, more sustainable meat treat, why not try the French Onion Burger at The Ainsworth. As part of the James Beard Foundation’s “Better Burger Project,” The Ainsworth, along with numerous restaurants around the country, has reworked their burger to include 25% mushrooms. This not only creates an uber tasty and juicy burger, but reduces calories, fat, and sodium while adding the great nutrition mushrooms provide (like B vitamins, potassium, and vitamin D). Plus, less meat means less toll on the environment. Win, win, win.

Ainsworth Burger

Ingredients

Burger

  • 500 g crimini mushrooms, minced
  • 20 g marinade
  • 64 oz ground beef
  • 100 g panko
  • 100 g all-purpose flour

Onion Ring

  • Large white onions
  • 250 g cake flour
  • 30 g cornstarch
  • 15 g baking powder
  • Soda water
  • Oil for frying

Steps

Burger

  1. Put mushrooms and marinade in pan, cook on medium heat for 5 minutes to sweat mushrooms.
  2. Season the mushrooms towards the end of cooking them.
  3. Cool down mushrooms and drain excess water.
  4. Once cool, add the mushroom duxelle to the beef, panko, and flour. Blend all ingredients.
  5. Form into 8oz patties, yields 10.

Onion Ring

  1. Mix flour, cornstarch, baking powder, and soda water to form batter.
  2. Cut onions into 1/4 inch rings.
  3. Dip rings in batter until coated.
  4. Fry at 350 degrees.
