Make some rainbow cupcakes! These are really fun and simple to do. You can use your own homemade white cake batter recipe or just buy your favorite boxed cupcake mix (if you are feeling a bit lazy). This whole process is pretty easy (make batter, color portions, layer, viola!), but the tricky part is in getting the colors right and layering it properly. We experimented for a while with the food coloring to make sure we had the perfect hues and then layered those fantastic colors into the muffin tins in reverse rainbow order (red, orange, yellow, blue, green, violet). Of course, there’s no rule that says you have to layer then in any particular order (or even layer them at all for that matter, just let them mix into each other if you want). Just be careful with letting them mix too much, these are respectable rainbow cupcakes, not hippy tie-dye ones 😛
If you have kids, this is also a fun project for the whole family. You can get creative with the order in which you layer your colors and the amount of each color you use.
These are the perfect cupcakes to have at any birthday party, St. Patrick’s Day, or gay pride event! We also recommend you topping them off with your favorite frosting. You can make your own whipped topping, use our cream cheese frosting, or just (again if feeling lazy) buy the store bought stuff to instantly become the hit of the party (we make no guarantees as it depends on how easily impressed your friends are).
Don’t forget to get creative and use some rainbow sprinkles or colored sugars to decorate these pretty things!
